If you are root on your box, you can mess with the XML files in the
$prefix/share/evolution/2.0/UI/ directory.
Most of the shortcuts are defined there.
I already posted a couple of custom patches to this list regarding this
files. Maybe some of them already do what you want. Anyway, which ones
do you wanna change?
