Just remember that You need to completly shutdown both Gconf and Evo before 
doing the changes or they might not kick in as expected.

Thanks a lot for the hint! Indeed I found my categories there but it seems like 
Evo is having an own sorting/shuffling algorithm because changing the order of 
the categories in the XML file doesn't seem to affect the order in the 
categories window in Evolution. Might this be some sort of bug or is there a 
way to really change the order of the categories?
