Ximian's source rpms live in the SRPMS directory under the rpm directory
on the ftp server. So look in

ftp://ftp.ximian.com/pub/ximian/evolution-snapshots/distributions/RedHat-7/SRPMS/

Or RedHat-6 or whatever, and you can enable what features you need.

Source tarballs live on ftp://ftp.gnome.org/pub/GNOME/unstable/sources/
or you can get the source for each release directly from CVS using the
proper tags.
