You can get the last stable version (evolution-0.16-ximian.2) at:

ftp.ximian.com/pub/ximian-gnome

and then pull it from the directory for your distro and do a manual
uninstall/install.  Alternately, you can use red carpet to uninstall the
Snapshot channel version and then install the version from the Ximian
GNOME channel.
