I just noticed that Evolution let me "send" a mail to a contact for whom I had entered no email address. I got no complaint because I had cc'd the mail to other contacts with email addresses. I only noticed when I looked in Sent mail and found some mails with no "To" field. Maybe a warning whenever you try to send mail to a contact with no email address ?
