This might be the easiest thing.... Have a preferred_from field in contacts. Have that as a drop down like the From in the new message pane.
Then for each list, you need to assign a contact (which most of us do anyway), and then have a preferred_from assign in the contact. This would be useful when I have different contacts that I want to appear from different emails. Sometimes when I can working with a client, I want to appear from with in the client's domain to people in that domain.
