For me the gpilotd-applet works well to keep gpilotd alive...

You need to install the gnome-pilot-applet-0.1.69-1.ximian.1 package
because they recently separated the gpilotd applet from gpilotd itself.

The applet is available under Applets->Utility->PilotSync.
