one thing you may want to try is grabbing the nightly snapshots from
ftp.ximian.com/pub/evolution-snapshot/debian-potato-i386 and making sure
you're getting the same problems with them...  i've had various issues
with the debian unstable packages, but have found that ximian's nightly
snapshots work wonders on said problems:  they install and run
flawlessly on unstable, despite their being labeled for potato (note
that you have to grab them from the ftp site, you can't get them through
red-carpet if you're running unstable)
