All but the first and last words:

=MID(TRIM($A2),FIND(" ",TRIM($A2))+1,FIND(CHAR(1),SUBSTITUTE(TRIM($A2),"
",CHAR(1),LEN(TRIM($A2))-LEN(SUBSTITUTE($A2," ",""))))-FIND("
",TRIM($A2))-1)

 

The formula ignores leading and trailing spaces, and also won't return
leading and trailing spaces if there were extra spaces after the first or
before the last word.
