I used Exchange Admin and verified their mailboxes are no longer on the old server and I have removed the old server from the Exchange Site.
The only way I have found to be able to completely remove the old outlook profile is to rename and recreate their Windows user profile on the machine. I have hunted through the registry and renamed and/or deleted all references to the old mail server, yet I still cannot change the Exchange server under the user's outlook profile. Strange, huh?
