I had similar issues when I was still running EX5.5 Standard edition. I took it upto 16GB several times and store.exe promptly stopped on me. At around 14 Gigs, store.exe started consuming a lot of CPU time and gobs of memory. Later I found that the mailserver was being crushed by the initial onslaught of Netsky/MyDoom. Symantec AV was scanning like crazy and kept store.exe blocking, presumably because it was waiting on Symantec to do its' job.
Check your AV software.
