Yes, in fact Microsoft recommends this in their E2k3 Deployment Guide. I shutdown my Exchange 5.5 services and disabled the System Attendant for a week (but left the server running). This is an easy step that could save you a load of headaches down the road, should you forget a something and have already killed your Exchange 5.5 server. I also ran my site in mixed-mode for about a week after removing the Exchange 5.5 server, for the same reason. Everything turned out okay on both counts, and I'm now running Exchange 2003 in native mode. Query-based DLs are quite nice!
