I have noticed the same thing recently. I think it must be because of the
SP4 roll-up (or some recent patch). I am in the process of swinging over to
a new 5.5 server and the new one has the roll-up (and all post SP4 patches)
installed and the old one doesn't. Looking back at messages that came
through the old server shows the old behavior.

Something I've only just noticed is that mail from mailing lists is now
showing the following in the "From" field -

"[EMAIL PROTECTED]; on behalf of; Joe Bloogs
[EMAIL PROTECTED]"

whereas before it would just show the sender.

I've only just noticed and haven't really investigated, but is this likely
to be down to me recently switching clients to Outlook 2003, or the May
Post-SP4 Exchange 5.5 rollup?
