If management requires the conversion prior to the completion you can always export the secondary SMTP addresses from Exchange Administrator (on 5.5) tweak the addresses in excel with a formula or something then reimport the file to update all addresses at once.
If you have a smart MX device for incoming mail you can also use masquerading to remap the addresses on the fly. We do this with several of our domains for incoming. Instead of having to update all mailboxes with multiple domains we simply rewrite the domain portion of the address. Good luck.
