I am in the process of building a hot-backup fileserver.  Pretty much any
current server will work.  I found a rackmount external drivecage ($1200)
that holds 14 hotswap SATA drives and  the drivecage connects to the server
via U320 SCSI.  Add (14) 400GB SATA drives and you've got yourself 5.2 TB of
RAID5.  Although, I will probably setup two arrays with less drives as a
RAID-10 setup.  Currently 400GB SATA hard drives are about $250 each.  So
for less than $6,000 you've got around 5TB of usable storage.  
I'm sure the old adage of all your eggs in one basket applies here, but who
can resist cheap storage!

Don't know if we have room on the Exchange server for that. We were thinking
of just directly creating the file on the file server which will have TONS
of drivespace when it's finally built...

The easiest backup strategy is usually to do an NTbackup-to-file of the
Exchange information stores, then use another backup utility to back that
file up to a tape or other removable storage media.  If you do backup to
file and don't have a tape drive available, at least copy that backup file
to another server location somewhere, in case the server goes TU.
