But that's what Enterprise edition is for. You start adding multiple
stores, etc to standard, there isn't much incentive left (clustering?)
for companies to buy Enterprise.
I can assure you that raising the limit in standard to 75 GB caused a
lot of grief with MS Marketing and Sales for those very reasons. They
stand to lose sales of Enterprise ed. from this change. 
I would count my blessings regarding this move by MS and move on. If you
need features like multiple stores, you bought the wrong version.
Otherwise, don't let your store grow to 75 GB. Its as simple as that.

Yeah, you can run database stores that are hundreds of GB big, however
backing them up, recovering them, online maintenance and the like take a
long time to complete . . . that's all. It doesn't break exchange, its
just not recommended.

If it's too big, don't let it grow that big.

75GB isn't too big.  I ran servers with stores larger than that with no
problems way back to the Exchange 5.0 days.

The problem with one 75GB store is that its just a bit big. It would
make more sense to have 4 stores with 20GB size limits, since that would
make SLA's for restores, defrags, whatever a whole lot better. 
75GB in one store just encourages admins to grow their junk to sizes
that are much less efficient than several smaller stores.
But, like you said! 75gb is a whole lot better than 16! :-)

75 GB is a nice number, and with the backup technologies available
today, you don't need more than one store.
