There are third-party products that can extract right down to the individual message level from the online database backups. On Track Power Controls is one such product. What are you using for your backups? You can do this with Recovery Groups and ntbackup, but it's not nearly as intuitive. Then again, it's free.
Basically, you treat it like a user mailbox restore, but drill down to the Contacts folder and restore that by itself. The only caveat is that this will work for the actual mailbox' Contacts folder, but NOT for individual address books stored as .pab files.
