If you were using an Exchange FrontEnd for them to connect their Entourage clients to, you wouldn't need to make any changes. The FE will automatically point them to the correct BackEnd.
When used to connect to Exchange "natively" Entourage is a WebDAV client and not IMAP. But even if they were configured as IMAP clients, an FE that handles your OWA/IMAP/etc will automatically redirect the traffic to the right BE. The IMAP portion even works when you have an Exchange 5.5 server on the backend still. If you're using IMAP directly to the BE, you'll want to change the address. Are your clients pointing directly to the BE or an FE? Technically, they'll still work if using the OWA/WebDAV on the old cluster and just retrieving data from the new cluster. However, if the cluster will be decommissioned you'll want to change the URL eventually (I suggest an FE!). Plus an FE works great for any Entourage users who travels.
