Go to Add/Remove programs and uninstall Exchange through there.  That's
the "preferred" way to do it per the documentation I read.  You don't
need the CD for this (at least it never asked me when I removed one of
my E2003 SP2 back end servers)

I have a question and may be somewhat stupid.  We are retiring one of
the old Backend servers.  We are running Exchange 2003 Native mode and I
have moved all mailbox's, Public Folders and insured that it is not the
first server, running SRS, Routing Master, Org Forms etc... And is not
longer a replica.  It's ready to be decommissioned.  In the removing of
the remove first server steps it stats to do a de-install using the CD.

For a standard backend should I use the CD to remove the server or is it
sufficient to go thru the Admin GUI and Select the server and "Remove
Server".  I've already dismounted all the stores and checked and
re-checked everything so I'm ready to pull the trigger.  I can put in
the CD and de-install but the system is off site so the GUI remove
server option looks enticing.
