Try this: If Sendmail is on its own domain, go to System Manager -> Global Settings -> Internet Message Format

When we were on Exchange 5.5, we were able to configure the mail settings such that email sent to the sendmail domain was automatically sent as plain text. It does not seem (although I am not 100% sure) you can do that with Exchange 2003. Currently , when users sent HTML formatted messages to any sendmail account, the message gets there albeit with many extra characters.
