Thanks for all the info guys. I won't turn it off at the Org level then.

I created a template to test this and it didn't work as expected,
although I read elsewhere that it does. I mail enabled a template
account, went to the Features tab and disabled and saved. I then copied
that account, it created the mailbox and on the Features tab, it was all
enabled still. Anyone else experience this?

Turning off the features at the Org level will turn it off for everyone.
You will also need to disable it for all new users going forward unless
you use a template account to create new users. This applies to the
other features such as OWA.

An ISA server in front of Exchange would allow you to control access via
a group or other security setting.

At the Org level, all mobile features are enabled. We want to disable
the features at the Org level and just enable it for users that are
authorized to use it on a per user basis. Is it ok to uncheck all of the
boxes at the Org level and only leave it enabled on the user properties
in AD that are allowed and it still work? If we do uncheck all the
boxes, will all new users getting created going forward have those
features disabled by default then?
