changing the IP address of an exchange box has no effect on it's operation,
but you should bear in mind:

- DNS 

you may need to add a new MX record in your external DNS and it will take a
day or two to propogate out around the world. usually this is not an issue
because there will be a firewall that NATs an outside address which is a
permanent fixture in the external DNS. all you would need to do in this case
is change the translation on the firewall.

if your external DNS entry for the server is it's real IP and you're not
doing NAT, then you must add a new mx record.

- Static mappings

some clients (particularly macs) may be configured to use a static address
resolution from a hosts or lmhosts file. these will need to be changed
manually.
