The Service Account Administrator is often referred to as the Site Service Account because it applies to the entire site. So your answer, as a couple of others have told you, is that any account you make a Service Account Administrator applies to the whole site. I wouldn't try to change too many things at one time. You should first move the server, wait for things to stabilize, then try to change the service account.
