You can change the service account on multiple servers using this method. You have to leave both accounts active until you've made the changes on all servers. You'll want to be very cautious about deleting the old service account!

The resource domain needs to be retired to consolidate domains, the service account is in the resource domain. I have new servers to move into the site and do an Ed C Server Move, but that would require the new servers to use the existing service account when they join the site. Therefore the only way to remove the resource domain and get over the service account problem would be to create a new site with a new service account.
