Sure, that's true. But the mail in those log files wouldn't have been backed up since he's talking about backing everything up at the same time. If you do an incremental backup of Exchange, that's just what it does--it backs up the log files. But it won't be of much use if you don't use the Exchange-aware backup.
If you put your log files on a separate drive from the IS, you're pretty well protected and shouldn't lose any data in the event of a single drive failure.
