I don't think it would be a problem to actually set up another Notes connector, but if I'm not mistaken, the Notes connector is another EDK gateway like the IMS. It will therefore probably be subject to the same issues with regards to re-routing, e.g. the MTA always sees the IMS as available and therefore won't re-route messages if the IMS is down. If the same is true with the Notes connector, then I don't think you'll get true redundancy.
