Click on the Options button when you're sending the message, and there is a
combo box for encoding.  The default value for it is Auto-Select, but you
can change it.

However, if you're encrypting stuff, it is possible that the receiving end
can't decrypt it.

I do not see any option to set uuencode for a message. The only thing I have
is rich text plain text and html. Also, in outlook I do see a place where it
is sending the messages using s/mime but I cannot turn that off or change
it....
