Oh yeah...  sure... if you want to do it the easy way.... otherwise, you
could go into ADSI edit and change the msExchHideFromAddressLists
property value to true.  ;)

Sure,

You need to view the "advanced features" on the OU.  Then click the Hide
from Exchange address list under the "Exchange Advanced" tab of the user
properties.
