I can't install it in another site, they all are remote sites.  I understand
relaying the mail to the 2k server, but what would happen when I need to
remove the only 5.5 server (IMC) in the local site?  How then would the
remote 5.5 sites send internet mail?  Thanks.

Install the IMC on another server in the 5.5 site, forward all messages to
your smtp connector and do a little mx magic.  In other words, set up the
smtp connector as a relay host for your internal network.  Otherwise, yes,
you will need to go into mixed mode.

OK, so it needs to co-exist with 2k then?  I have 4 sites.  2 other sites
are still running 5.5.  My main site has the first 5.5 server which hosts
the IMC.  We just put in a 2k server that will be handling Internet Mail
from now on.  We are going to be removing the first server(the one with the
IMC), so how would I route internet traffic from the 5.5 sites then? Thanks.

No no.. You don't disable anything. Why do you want to disable it? 

You have it relay all out bound email to the 2k SMTP server.

Check the FaQ there is a entry about using a win2k SMTP server as a relay. I
think that is what you want to do. Forward all outbound email to the 2k SMTP
server.
