I had a similar environment in my old job which was on an exch5.5 server. If i needed to check how had sent the meeting requests, I think the way I did was just to log on to that mailbox using the mail client on the server and checking the inbox. I'm afraid I can't remember exactly how I did it but it was similar. There are probably better ways of doing it tho.
