That is true, since the offline defrag process essentially rewrites the database ( A second copy) without the whitespace. It is possible to defrag to a network drive, but it is time consuming.
Unless you're running out of diskspace, or are running up against the 16GB limit, leave the Store databases alone and let Exchange manage its own storage.
