Wow...we run our BB server on a PIII 600 with 128MB of RAM.  Just a workstation box.  I haven't had to reboot my BB server in about 4 months.  Even then I only took it offline to upgrade it to Win2K server.
Granted we are only supporting about 12 users on it, but since the new version of BES came out, we've had zero problems with the server.  Make sure you are running the same SP for Exchange on the Blackberry server as you are on your Exchange server.  I believe SP4 for Exchange actually had some fixes for the Blackberry connectivity, if I recall correctly. 
I installed the CDO hotfix (at the time I had to call PSS to get it) after installing Exchange SP4.

It's running all by itself on a dual processor P II 300 with 1 GB RAM. The annoying part isn't having to reboot, it's having someone call saying they aren't getting messages. (Like the CEO)

good to know - exact opposite of what I heard from a buddy running a law firm - server isn't really doing that much so a weekly reboot doesn't scare me to much - I get to beta it for our site then roll it out if it works.  Will add users v-e-r-y gradually.

We have it on it's own box and it's not very robust; i.e. we have to re-boot every two weeks or so because it craps out.
 
Trying to shut down the service hangs and you have to re-boot anyways. RIM needs better software that doesn't crash so often.

Jim,
You are not going to install it into the Exchange. Blackberry server should be different box with Exchange Administrator software. This is not Exchange server.
This fix should be applied to Blackberry box, not to Exchange server.
Blackberry box will use just one mailbox for sending messages to wireless network.

Getting ready to install the blackberry enterprise server on one of my machines and in reading the docs I had a quick question.  They mention that we need to update the CDO.dll according to Q289606.  I have downloaded the file but I want to be sure if it goes on the exchange server or the blackberry server?

If on exchange has anyone had a problem with it?  I hate installing into exchange.  Gives me a cold sweat just to think about it.
