It appears that I assumed to much about the environment before posting... What OS and SP is actually running on the box that has Event Viewer open? That holds the key to whether it should be able to display the appropriate log files. Typically it should be equal to or a higher OS/SP than the box you are monitoring in order to see all the detail from the logs.

When you load the Exchange Admin program on your machine, it also loads the appropriate information for the events logged on the Exchange server that you are managing remotely. Also, you need to make sure that the admin tools are the same SP level that your server is running.
