Even if you only stop the World Wide Web Service you will loose the ability to administer public folders with the Exchange System Management Console and the Instant Messaging stuff will no longer work. If you deinstall IIS you will screw up your whole Exchange 2000 installation because this will also remove the Windows 2000 SMTP & NNTP services which are used by Exchange 2000. Also IMAP4 & POP3 will stop working if you remove IIS.
