Title: RE: *.ost to a *.pst
I used the ExchangeRecovery tool that Martin suggested.  I was able to convert 2 ost to pst files.  There was nothing listed about what the limitation are of the demo.  The one thing I did notice is that I couldn't uninstall it after I was done.

Since the logon account was already deleted, if you can't log on to the
workstation using cached credentials and access the original Outlook profile
to startup in offline mode, you are probably out of luck.
