If their mail server is 'off site' then they likely are not using MAPI profiles and are using POP or IMAP to access email. This does not allow for 'shared calendars' as .pst files can only be accessed one at a time. I have a client who are using Olook 2000 some of the users share their calendar with others after a while they lose the their share and they have to go through the process of sharing again.
