Tony Redmond's book is good for overall planning and understanding of the product, but can go deeply into some areas that you might not want to know.
Also, the Digital Press book "Exchange 2000 Infrastructure Design" looks good - has anyone here read it fully yet? I must say that I quite like the MS Press books for the 70-224 and 70-225 exams; they cover good info and somewhat surprisingly relate to real-life situations and not just exam material! The Resource Kit seems a little dated now - I guess we could do with a new "Notes from the Field" type book here.
