I do run OWA on a different box but have yet to see your statement shown to be true or documented. That's really what it was designed for. Second, if you uninstall the SMTP Service from IIS, it will NOT shut down the Exchange services. They are completely separate. But you do need to actually uninstall it, not just shut it down. Re-install IIS, and choose to add/remove components, then just remove the SMTP Service.
