You can.  The issue is if the server you are removing is / was the first server in the site as it typically homes the public folders and site folders for public free / busy data and the offline address book.  In that case also study Q152959.

Is it not possible to add the server to the organisation and site as another server then use Move Mailbox to the new server?  I've spoken to Microsoft who told me that you can add another Exchange server to the site.
 
Or am I just being naive?

Does any one have any experience of moving Exchange 5.5 off of a server
running SBS 4.5 onto another server.

I would like to move it to a Win 2000 server in the same Domain.

I would then like to make the SBS Server into full NT 4 server before
eventually migrating fully to a win 2000 domain.

Currently the SBS Server is only running Exchange and file and print
services.
