Stop Exchange Services Copy PRIV.EDB, PUB.EDB, DIR.EDB at a bare minimum. Do an Online Backup if at all possible (NT 4 can only go to tape out of the box, but 2000 can backup to file.) This will require that you restart at least up to the Information Store level(SA, DS and IS)
Be aware that if you rely on flat file copying, it may be more difficult to restore the files.
