Yup you can use the Outlook 9 for Mac...it is expressively for Exchange clients, no POP support. You'll probably also need to create a hosts file for the Mac. You can also use OWA (easy enough) or Entourage for POP access. It all depends on how much you want her to use the Exchange benefits such as scheduling, sharing resources, etc...if only mail is needed, just use Entourage or something like it.
