Yes this does work.  No you don't need the same IP.  The only caution is that you have to wait long enough for the Directory Service to update before the client attempts to log on.

If the users are connecting via MAPI, then Directory Service will update the profile providing both the original and new servers are available at logon.

When using Ed Crowley's move method, he states that just about everything can be done "live". What about user references to the old server, via Outlook?

 

Can this all be done invisibly to the user, even with a different server name?
