In ESM right click your server and bring up the properties. On the General tab the "Enable Subject Logging and Display" and "Enable Message Tracking" should be checked. This will generate the log files in the X:\Program Files\Exchsrvr\servername.XX folder. Check for the folder first since I believe these are checked by default.
