If this one's still an issue... In ADUC, if the address is listed on the General tab as the E-mail, but is not actually listed in the E-mail Addresses tab, I've seen this behavior occur. Change the address on the General tab, then change it back and Apply, and the address should be auto-magically added to the proxy addresses -- one of several possible ways to correct the issue.
