Hmm, I'm not sure exactly where you are referring to.  Is this a setting in 
Exchange 2007 Management Console???

If I go to Organization Configuration, Mailbox, Managed Default Folders, and 
then select "New Managed Folder Mailbox Policy", I can then group all the 
default folders together...

Calendar
Contacts
Deleted Items
Drafts
Entire Mailbox
Inbox
Journal
Junk E-mail
Notes
Outbox
RSS Feeds
Sent Items
Sync Issues
Tasks

I'm assuming from here, I could say....."Delete any item in the entire 
Information Store older than 365 days"?

However, if I want to delete every item in every users mailbox (not just the 
default folders) that are older than 365 days, how would I specify the entire 
mailbox?  I do see a "Managed Custom Folders" tab, however when I select ADD, 
it gives me the same choices as above?  If someone creates a folder called 
"Keep forever" and puts mail in there....???

Sure, look at Recipients | Recipient Policies and create a new Policy, all 
kinds of options, I delete any deleted mail after 2 days.
