Well it did work, very easy, we added a new virtual DC, demoted one of our physical and now have 1 physical and 1 virtual and exchange is still very happy.

I remembered the first time I did this, I must've scratched my head over this for at least an hour before I figured it out and smacked myself upside the head. D'oh! Really poor interface design. In the drop-down box, you have to select the "type" of domain controller. So select "Domain Controllers" and "Global Catalog Servers". When you've selected a particular type, it lets you edit them. If you just "cut one off" that Exchange is currently using, it may take up to 15 minutes for Exchange to detect that and automatically correct for it.
