Right, in a nutshell.

The key phrase here is "content conversion". External email has to be converted 
to an Exchange format.

I know that there is a registry key in late versions of exchange 2003 and 
exchange 2007 that allow you to override this in the case of email to public 
folders, but I couldn't find it in 2 minutes of googling. But I promise you it 
is there, if you want to hunt for it. :)

Just a guess here, but Outlook is an Exchange aware email client, these others 
are not.
