As "unknown dude" said - you can write a program/script to query the Exchange namespace via WMI. It's a bit more challenging.

From what I can see if a service account accesses the mailbox it changes the lastlogontime and lastuser. Is there a way to get this information from a cmdlet or is turning up logging and parsing the logs the only way to get this info.
