They care b\c it's named after the company that owned them in the Ex5.5 days 
circa 1996.  I totally agree it's cosmetic, just looking at options.

So do I create a new Exchange Org before I move mailboxes?  New environment 
WILL be a part of their production forest\domain.

Easy answer: It's impossible to rename an Exchange organization.

Perhaps a more relevant question might be: why do they care? You never see the 
organization name unless you go hunting for it...

Moving a customer from the "old-as-dirt" <@MBS> Exchange 2003 to 2010.  After 
the migration, they want to rename their Exchange org.  How big a deal is that? 
 I really don't want to do it before the migration since we're migrating 
mailboxes over the wire, 'n stuff...
