Sorry....The PF store is the critical one at the moment.  I have a clean 
shutdown version of the PF database ready to go but it's *.edb1.  Can I just 
rename to *.edb and copy over to production after dismounting the PF store?

You would have to use a third party tool to get the content in to PST files.
However why don't you just mount them in to an RSG and extract from there? No 
third party tools required.

Exchange 2003, DBs puked this morning, had to conduct a dial tone restore due 
to time constraints.  I have the original offline DBS that have repaired to 
clean shutdown state via eseutil /p (I KNOW...shut up) So.. can you use ExMerge 
to extract data from an offline database?
